use any open tuning and that will keep you using 1 finger. check out john butler he uses open c and capos a lot. but also the thing about learning to play in an open tuning is when you go to play a standard tuned guitar you dont know what to do. i say learn standard first, but its fun to experiment with open shit and different tunings.
