On the gain channel its volume bost and gain boost. On the clean channel its bright button and channel switch.

Gain button- increase in gain and slight treble increase
Volume button- just increases the volume
Texture knob or button- turns your amp into class A or A/B basically mimics a small wattage setting in A/B
Pressence- high end harmonics think treble
Resonence- Low end tightness

Replacing my stock preamps with JJ's really brightened up the amp so it will help out alot. As for the pedal it might help you would just have to test it out. But using the pedal will take away from that tube tone so just know that might happen, if you dont mind it then it should work out. As for cabs go with a marshall cab. Peavey cabs aren't the best choice. Also Avatar makes some nice cabs.

If you get the VK and put JJ's in the preamp's and shy away from using something darker in the power amp section. It might work out for ya, right now mine is somewere in between a marshall and a mesa recto. Using stock power amp tubes and all jj's in the preamps.

Sure, it is a les paul :p

No seriously: it can do all these things you said. But the pickups are high output ones, so you might want to be carefull with the gain knob if you play blues and stuff. And you can always change the pickups to PAF's, if you think they are too hot.

Honestly it might be a bit to modern voiced. Something Marshall/British voiced due to slash, van halen and motley crue. You might want too look at some like a windsor its a jcm 800 clone and sounds pretty decent.
