2 Large Onions (sliced/diced finely) 1/4 Stick Cinnamon 2 medium tomatoes 1 clove 3-4 cloves of garlic (slice/dice/mash, you gonna eat em anyway) Salt (to taste) Sugar ( to taste) Coconut Milk (substitute with milk or cream ) 3 medium potatoes, diced into decent sized cubes CURRY POWDER ( Baba's <-- THE BEST) CHILLI POWDER ( Baba's <-- THE BEST!!!) Well, so. Slice/Dice/cut the onions, garlic ,potatoes and tomatoes and lay them aside. Get the wok/pot heated up, chuck some oil in there and wait for it to heat up. First, throw the onions in there, when the onions start crackling, throw the clove and mashed cinnamon stick in there and let them fry for a few mins, 2-3, dont let the onions blacken though! Chuck the garlic in, and give it a good stir. , leave for about a minute, unitl the garlic starts getting brownish. Chuck the tomatoes in and let that fry for a bit , until it loses its shape slightly.
Throw in the Curry Powder ( mild = 2.5 heaped tablespoons) , and chilli powder (1 teaspoon). Stir well, and add water - about 1 litre. Stir well. Throw the potatoes in now. Stir again, and leave to boil. Once the mixture has boiled down to your intended thickness, check the potatoes; if they're soft, the curry is ready - add the coconut milk ( 50-75 ml ) and leave it to boil for another 3 mins. Add salt and sugar to taste. Tomato ketchup is excellent too.
That's basically it.
If you want to add stuff, like chicken etc etc, well, you can either add the chicken before the tomatoes, or with the potatoes. The latter option makes the chicken really soft, and the former makes it slightly fried kinda.
Egg curry - boil eggs, peel em, small slit through the middle, and add with the potatoes.
There ya go. Experiment with the curry powder and chilli powder ratio. I just go by my tongue, is all.
