Well I mean the style of any music will change over time. Compare rock and roll to today's alternative rock. Jazz is no different and you'll be able to pick up on the differences right away.

Personally, I notice that modern jazz generally is much looser in its rhythms whereas bop and traditional mostly relied on a tight swing beat. The language of modern jazz is more "exotic" in the solos and harmonies, compared to trad which uses a lot of conventional harmony (you'll notice that many tunes seem to use the same progressions). I generally prefer modern jazz because it provides more variety, but there's nothing like a good Wes Montgomery or Charlie Parker solo.

There's lots of different kinds of jazz. Here are some of my favs:

Traditional/Bop: Charlie Parker, Wayne Shorter, Wes Montgomery, Pat Martino, Chick Corea, Jim Hall, Joe Pass.

Modern: Bill Evans, Keith Jarret, Brad Mehldau, Kurt Rosenwinkel, Tim Miller, Mark Turner, Frank Vignola.

Keep in mind the way much of jazz is focused around a fixed form, meaning that a series of A and B sections repeat. A lot of jazz sounds very progressive even in simple AABA only because the musicians are constantly improvising and reinterpreting each section as they play. See if your ears can stay on track of the form. Also, listen to the solos as almost conversations with each other, not as a fixed segments in a song like the way rock/metal uses them.
