For medium level pieces, I would take a look at Bach transcriptions that aren't very fast. If you want some names, here's my recommendations:

"Pavane Pour Une Infante Defunte" - Maurice Ravel
"BWV 1006 - Gavotte En Rondeau" - Johann Sebastian Bach
"Etude No. 1" - Heitor Villa-Lobos
"Choros No. 1" - Heitor Villa-Lobos
